We're enjoying the South Beach Diet. We did it for a week and then went to New Orleans for the weekend. Likely we negated all the good we did but there's no way to stay on the SB diet when there are bignets at the Cafe Du Monde. NO way.
I've decided to share some of my favorite recipes so far. Please Goo.gle them and try them. The yummy delishiousness you find while trying to lose weight is like Christmas. Well. Maybe not. But it's sorta like a ..... birthday? You know what I mean.
First recipe that made both the Mister and I do the happy dance is :
Moroccan Lemon Chicken With Summer Squash And Green Olives
This dish has the best mix of flavors. I don't know about you but boneless, skinless chicken breasts can leave a lot to be desired. I will tell you I had no cayenne pepper so used a few red pepper flakes. I also didn't pound the chicken breast thin, I just cooked them a little longer. Something about pounding a chicken breast and having the juice fly around is worrisome for me. Heh.
Second recipe that made us extremely happy and "mmmmmm" ing:
Ginger-Dijon Glazed Pork Loin
This dish made a really moist tenderloin. Here's what I did...I didn't have fresh ginger that day so I used 1/2 t. dried. I also had chopped garlic (pre-prepped) so rather than slice and place inside the tenderloin, I just added to the sauce. I also put them in the crock pot on low for about 3 hours. Nothing else in there with them, just the loin and the yummy saucey-goodness on top.
I now keep a fresh ginger root in my freezer for these types of recipes. Apparently and according to all the "pros" on the Food channel, you can use it right out of the freezer. I'll let you know how it goes.
The diet is working well for the Mister. He's lost 8 lbs so far. I've lost 3...maybe. I swear, it's so unfair that men lose better than women. But at least it's something and it gives some motivation for not being able to eat any bread or sugar for 2 weeks. The biggest motivation is to make sure we're healthy. Not so much the scale. Neither of us have any health issues, cholesterol is great, yada yada...but we're now 40 and it's one of those things that hits you.... "um...I better stop eating like a college student (and drinking like one)". Truly, much to the Mister's chagrin, I've been making him eat whole wheat bread, natural peanut butter, veges and fruit- the whole nine-yards- since we've been married. Now I've added egg substitue and so many veges, we're...um.....extremely regular and efficient at least 2-3 times a day. That makes us laugh.
Nothing else much is new around here. We painted the guest room this past weekend. The landlord is sent carpet cleaners to clean the basement. Shady. Those dudes were shady. The Mister only let them do the basement. It was wet for almost a week. We have the dehumidifier running still. Thank goodness the Mister declined the landlord's offer of doing the entire house, if we wanted to. The water squished between our toes! Gross.
Hope all of you are well. Speaking of well....if someone doesn't do something about the gazillion gallons of oil spilling into the Gulf.... I swear I'm going to march on Washington myself. WTF?! *knock* *knock* Anyone? Anyone? Beuller? Beuller? Idiots. The ocean is dying you fucktards.

Um yeah, major logistical and engineering problems when something goes wrong on a deepwater well. I love how they're going to plug it with trash. Oh yeah, that's gonna work!
